In this study, the phenolic flavonoids profile and antioxidant and anticancer activity of white truffle (Tuber magnatum) along with a cell antioxidant stress evaluation were carried out. The total phenol and flavonoid contents both have a high antioxidant ability to inhibit free radicals, which can slow down aging. In addition, the free radical scavenging abilities of 2,2-azino-bis(3-ethylbenzothiazolin-6-sulfoic acid) (ABTS) and 2,2-diphenyl-1-picrylhydrazyl (DPPH) were similarly measured to observe the erasure of free radicals that cause aging and disease. White truffle extract measurement showed that total phenol content was the highest in distilled water, at 13.81 +/- 0.18 mg/g, and flavonoid content, at 2.75 +/- 0.29 mg/g, was the highest result obtained. The RC50 values ofABTS free radical scavenging ability were 2935.04 +/- 0.3 ppm in distilled water, and the DPPH free radical scavenging ability RC50 values showed a 50% scavenging capacity of 6142.23 +/- 0.51 ppm in distilled water.
